1. Reason for revision

It is intended to prepare the basis of shared kitchens so that a business facility may be shared by plural business operators, to prevent and respond to possible cross-contamination, etc. in shared kitchens with designation of sanitary control managers, and to determine definition of shred kitchen business, qualification standard for sanitary control manager, and legally delegated matters including the matters needed to buy insurance such as kind of liability insurance and the matters needed for execution thereof due to revision of Food Sanitation Act (Act No. 17809, promulgation on December 29, 2020) with the content to buy liability insurance to compensate consumers for damages of foods manufacture, processed, or cooked by shared kitchens.

 

2. Main content

A. Definition of shared kitchen business is established and the business shall be registered to the head of se/gun/gu (Establishment of Article 21.ix and Article 26-2.1.3 of draft)

B. The qualification standard for the sanitary control manager to be appointed by the person who intends to operate shared kitchen business is decided as the person who obtained certificate of food technician, food engineer, or food industry engineer or completed the course of food processing or food chemical, etc. in a college or technical college (Establishment of Article 27-2 of draft).

C. Detailed matters on kind and compensation scale of liability insurance to be bought by shared kitchen business operators are established (Establishment of Article 29-2 of draft).

D. Detailed standard is established on imposition of fine for negligence for cases that shared kitchen business operator does not report appointment/dismissal of sanitary control manager or hinder the work of sanitary control manager (Appendix Table 2 of draft).
